With two bars ranked in the World’s 50 Best Bars, Nikos is a master mixologist, specialised in Liquid R&D, menu development and no-low creations.
"The concept for Prins & Aap's inaugural cocktail menu aims to establish a distinctive destination that accentuates localization and features Dutch ingredients. Simultaneously, it upholds a commitment to biodiversity, supporting small producers and Dutch companies practising ethical production methods. This idea serves as the foundation for presenting diverse flavours in line with the ethos of Amsterdam and Andaz Amsterdam. To capture this diversity, we draw inspiration from various elements, including shapes, colours, and unconventional combinations."
